Christmas baked cannolini




Pasta is not exclusive to Italian gastronomy: in traditional Spanish recipes there are also dishes that use it, such as cannelloni. In fact, in Catalonia it is a tradition to prepare them on December 26, on the feast of Saint Stephen, as a good way to use the remains of the Christmas table.

In our recipe today we make cannelloni using another classic of Christmas tables: roasted birds such as chicken, capon or turkey . This combination, together with a good amount of  cheese in both the bechamel and the pasta , results in a great dish to enjoy during these holidays

Ingredients

½ roast chicken (with bones)
150 g grated mozzarella 
16 sheets of pasta for cannelloni
Salt
Olive oil

For the sauce
½ onion
2 cloves of garlic
1 small carrot
½ stick of celery
1 bay leaf
1 sprig of thyme
1 sprig of rosemary
Black peppercorns
500 ml chicken broth
40g flour

For the bechamel
1 liter of whole milk
50g butter
40 g wheat flour
100 g of grated  mozzarella 
Ground white pepper

Preparation 
The sauce

Debone the roast chicken with your hands and reserve the meat. 

 
In a pot with a bottom of olive oil, brown the onion, garlic, carrot and celery cut into large pieces with a bay leaf, a sprig of thyme, another sprig of rosemary, a few grains of black pepper and the bones. .

When the vegetables are golden, add the flour and mix, scraping the bottom. This will give consistency to the sauce.

After a couple of minutes, add the chicken broth  . Cook over medium heat until reduced by half and add salt and pepper if necessary. Strain and reserve the vegetables for the filling.

 The filling

Finely chop the chicken meat with the vegetables with a knife. Mix in a bowl with the sauce, adjust the salt and pepper and set aside.

The bechamel
Heat the milk in a saucepan.

 
In another saucepan, melt the butter over low heat and add the flour, stirring constantly


Add milk little by little, stirring constantly so that there are no lumps..Boil over low heat for 10 minutes. There should be a light béchamel.   

Eliminate any lumps with the help of a hand blender, and add the grated cheese  and white pepper. Taste and adjust the salt if necessary.    

 The assembly
Cook the pasta sheets as indicated by the manufacturer.

Place the sheets on a clean cloth, add filling and form the cannelloni.Place them in order on a buttered baking tray.  

Add the bechamel and grated mozzarella on top.  Bake in the oven until the surface is golden brown.
