This is of czech orgin.We use both pork and beef to make it. But you can use about 1.5 kg of one meat for only beef or pork sausage.
Substituting chicken for beef and pork must reduce the taste and broth for wine destroy the wine name of it .
However you can use chicken and broth according to your will
If you don't like sausage casings simply coat with breadcrumbs and fry.

Sausage casings
Add salt to the beef cubes, mix, leave to rest for about an hour.
Soak the bread slices in a portion of milk. Finely grind beef and pork without bone with bacon together with a squeezed bread . Then grind with the spices dissolved in the wine, add the rest of the milk, cream and wine.
We fill the casing with the created smooth mass. If we do not have a casing and a filler, we can shape rollers from the mass, which we wrap in breadcrumbs and fry.
Christmas wine sausages are served with mashed potatoes and sauerkraut.
