Christmas meringues

Meringues are a great heritage of swiss and french  cooking .We use the normal meringue  batter but change the shape of meringues into christmas  trees .For a more christmassy look use confetti /candy sprinkles and sprimkles.

4 egg whites

230g sugar

20g icing sugar( powdered sugar +corn flour)

Green dye

A baking sheet covered with parchment paper
 Preparation:
The secret to successful meringues is to first whip the egg whites and then add the sugar little by little. You can use only caster sugar, or icing sugar. Preheat the oven to 120 ° and prepare a baking sheet covered with parchment paper. Separate the whites from the yolks and put the whites in your salad bowl. Weigh your sugars. Whip the egg whites. Once the whites are well set, gradually incorporate the sugars while continuing to mix. At this time, you can customize your meringues by choosing the color. For the recipe, we want white meringues for the snowmen and green ones for the fir trees. So we separate our preparation into two parts. Incorporate the food coloring in one of the two pastes until to obtain the desired shade. First place the white meringue mixture in your pastry bag and shape the snowmen (a small ball for the head and a larger ball for the body). Then, for the second green preparation, you take a pastry bag with a round opening and you make 3 balls one above the other and you end in a point (as in the photo of illustration). Once the meringues are shaped, you can decorate them by adding stars or vermicelli of sugar on the fir trees or the buttons of the snowman. Place your baking sheet at the bottom of your oven and cook for 45 minutes to 1 hour depending on the desired result (soft or crispier). After cooking, turn off your oven and let the meringues finish cooking in the hot off oven. first mix the white meringue in your pastry bag and shape the snowmen (a small ball for the head and a larger one for the body).
