Christmas fruit cake with glaze



Normally we ice christmas fruit cake using marzipan and royal icing . But in this recipe we make a chocolate glaze to cover the cake .
for the cake .
This is a light christmas cake made with a less amount of raisins and a more amount of candied fruits .

3 eggs
150 gr. Sugar 
1 pinch . salt
0.5 tsp ground cloves and nutmegs
1 tsp ground cardamom and ginger
grated lemon peel
125 gr. flour
1 tsp  baking powder
100 gr. chopped walnuts
75 gr. light and dark raisins
100 gr. chopped candied orange peel
100 gr. Pineapple candied fruits.


for glaze:

2 tbsp cocoa powder
2 tbsp Sugar 
2-3 tbsp milk
30 gr butter
for decoration:
nuts
orange zest

1. Prepare all the ingredients, sort and rinse the raisins.

2. Stir eggs, sugar, spices, lemon zest, flour and baking powder.


3. You should get this kind of dough.


4. Cut into strips pineapple candied fruit, dried apricots, chop nuts.


5. Add everything to the dough along with candied orange and raisins.


6. Mix well.


7. Oil the baking dish and sprinkle with crushed nuts.

8. Put the dough in the mold. Bake in a preheated oven at 180 * 45-50min.


9. Take the cake out of the mold and allow to cool.


10. While the pie cools down to cook the icing: mix all the ingredients for the icing, except for the butter, constantly stirring, bring to a boil, remove from heat and add the drain. oil. Stir until oil dissolves. Cover the cake with hot glaze, sprinkle with nuts and orange zest on top. Allow to freeze in a refrigerator
