Christmas cupcakes with chocolate chips

 
This is an holiday cupcake recipe with chocolate chips and fruits .We also add some port wine to improve the christmassy flavour .
We also add yeast to this cupcakes instead of baking powder which we use in normal cupcakes .This recipe calls for three types of nuts . You can use only one type of  nut if  you can not find other two nuts. You have to leave the dough to rise .It is ok to say that this cupcakes are Christmas panettone cupcakes .

80 g raisins
 50 ml wine (port),substitute with orange or apple juice 
 25 g of yeast
 80 g sugar (flour)
 80 ml milk
 250 g flour (smooth)
 1 egg
 1 yolk 
  Pinch of salt
  Grated lemon peel
 50 g hazelnuts
 50 g pecans
 50 g  broken chocolate (bitter)
 50 g almonds
 80 g butter
 
Pour wine over the raisins and let them well.  Let the yeast dissolve with a tablespoon of sugar in half of the lukewarm milk.
 Sift the flour and add salt, the rest of the sugar, eggs, yolk, juice, butter and knead the dough.
 Let it rise for 60 minutes.
 Add raisins, almonds, nuts ,lemon peel and broken chocolate to the dough.  Put the dough into greased cupcake moulds,  bake at 180 ° C for 20 minutes.  Then reduce the temperature to 160 ° C and bake for 20 minutes.
