Festive Christmas rissotto







This festive Christmas risotto is a delicious and easy-to-make dish that is perfect for a holiday meal. The creamy risotto is made with arborio rice, apricotts, beef ,cream ,nuts and vegetable broth, and it is flavored with orange juice. The dish is finished with a sprinkle of Parmesan cheese and a garnish of fresh herbs.


preparation time ; 2 hour

400 g short grain rice 
100 g of chopped apricots or dates
200 g of cubed beef  tender 
50 g of toasted almonds
100 g of butter
100 g fresh cream
200 ml of orange juice
1 tsp of paprika or chili powder
salt

Ingredients for the broth:

02 liters of water
01 celery stalk with leaves
1/2 carrot
01 onion
salt 
 
Preparation 

Prepare a vegetable broth by cooking all the broth ingredients  in  water for 1:30 hours  .

Melt the butter with a little oil and brown the tender, remove and set aside.
Brown the apricots until lightly toasted, add the rice and the  paprika  stir well.

Season with salt and add the orange juice, cook  until dry,  add  toasted apricots.

Put the broth and cook until it is to the  dry.

Put the tender, the fresh cream and stir well.

Decorate with almonds..
