Christmas crepe rolls

  




Hungarian palascinta are paper-thin pancakes served rolled or folded into triangles with fruit fillings, ground nuts or whipped cream. It is a nice christmas morning or tea time snack. This recipe is for pancakes with sweet filling with orange chocolate filling and almonds .




Serves ; 10 -12 


Ingredients:
For the pancakes

 2 eggs
 1 pinch of salt
 3 teaspoons of sugar
 1 teaspoon of vanilla extract
 300 g of flour
 300 ml of  soda water
300 ml of milk

 cooking oil

For the filling:

 100 g butter
 80-90 g powdered sugar
 40 g cocoa powder
 1 tsp gingerbread spice
 orange jam
 candied orange peel
 sliced almonds

Preparation

In a medium mixing bowl, combine eggs, milk and water. Stir in flour, sugar, salt and vanilla to form a smooth batter .

Heat 1 teaspoon oil in an 8-inch skillet. Use small ladle to add enough batter to coat bottom of pan in a thin, even layer, rotating pan as needed to cover. Cook for 2 minutes on the first side and 1 ½ minutes on the second side or until the pancake is lightly browned.

Remove and keep warm while cooking the rest of the pancakes with the remainder of the oil and batter.

Mix everything for filling except almonds and spread on pancakes .Top with nuts and roll tightly to make crepe rolls.
