A traditional no bake or no steam christmas bread pudding recipe from Portugal.One of the best way to use leftover bread during holiday season.


250ml of water
2 tablespoons of honey or sugar
250 g of sugar
2 cinnamon sticks
3 lemon peels
6 slices of bread about 250 g 
50gr of butter
3 eggs
1 cup of Port red wine 
1 pinch of salt
pine nuts and raisins
powdered cinnamon for sprinkling.

 

Start by crushing the bread.
In a saucepan place the water and cinnamon and add the lemon peel and a pinch of salt.
Bring to the boil until it boils. Simmer for about 10 minutes.
Remove the cinnamon and lemon.
Add the bread and butter, stirring constantly so that it comes apart well.
Boil for 5 minutes.
Add honey and sugar. Continue to stir so as not to cling to the bottom.
Beat the egg yolks in a bowl, together with the Port wine and add to the pan.
Add the walnuts, pine nuts and raisins.
Bring to a boil 2 minutes, remove from heat.
Place on the platters.
Sprinkle with cinnamon and let cool.
It should be eaten cold.
