New Year's ice cream

 Ingredients 

2 cans of condensed milk

 2 cans of milk 

5 egg yolks 

5 egg whites 

8 tablespoons of sugar

 1 can of sour cream


 Caramel syrup 

1 cup (tea) of sugar

 ½ cup (tea) of boiling water


 Chocolate syrup 

4 tablespoons of powdered chocolate

 6 tablespoons of water 

Preparation 

 Add the condensed milk, milk and yolks and cook, stirring constantly, until it boils. Continue stirring for 2-3 minutes to cook the yolks.

 Transfer to a bowl and allow to cool. Whip the egg whites. Add the sugar and cream and lightly beat until combined. Add the egg white mixture to the cooked cream. Reserve. 

Prepare the caramel sauce: melt the sugar until it reaches a caramel state (take care not to get too dark; otherwise, bitter). Add water and simmer until caramel melts completely. If it gets too thick, add 1 or 2 tablespoons of water.

 Spread across the inside of a central cone pan and freeze until frozen.

 Prepare the chocolate syrup: place the ingredients over low heat and bring to a boil until it forms a medium syrup. Distribute over the caramel sauce and take it back to the freezer to freeze.

 Fill the pan with the cream and return the pan to the freezer for at least 6 hours before removing it from the mold (quickly immerse the pan in hot water or pass it over the flame on the stove).
