Catalan christmas chicken



One of the most typical dishes of the Catalan tradition is the Christmas roast , which is prepared every year to share with the whole family and friends

When we talk about dishes as traditional as this, most of us are of the opinion that "my grandmother's is the best" , but maybe it's time to learn how to cook it yourself, right?

Serves ;4

ingredients

1 chicken of 2 ½ kg.


4 large  onions


 4 shallots


4 tomatoes


 ½ kg. of small potatoes


24 figs 


24 plums


 A handful of pine nuts


 1 sprig of thyme


1 sprig of rosemary


1 head of garlic


2 glasses of brandy


Salt


Olive oil


100 g lard


Preparation 




In a saucepan with plenty of oil and the lard, put the chicken cut into octaves and salted.


 Roast it over low heat, turning the pieces so that they are all well roasted. Add the onions cut into thick pieces and the shallots, thyme, rosemary and whole head of garlic. 


Soak the plums   in a container with the brandy. Boil the potatoes with the skin in water and salt. Make sure they are not overcooked. 


When the onion starts to be ready add the tomatoes cut into pieces. When the stir-fry is ready, add the potatoes, plums and brandy.


 Leave to cook for about fifteen or twenty minutes on low heat, until the alcohol evaporates. When five minutes are left, add the pine nuts and potatoes
