Christmas pumpkin soup

Preparation time ; 30 minutes

Ingredients


500 g pumpkin flesh (Hokkaido, because it tastes good and doesn't have to be peeled)

1 spring onion or 1/2 shallot

2 teaspoons of oil

1 l of vegetable stock

100 ml of white wine or more broth with a little vinegar

salt & pepper

cinnamon


Preparation

Core the pumpkin and cut into small cubes. Finely chop the onion. Fry the onion in oil until translucent, then add the pumpkin and roast.

 Deglaze with white wine and pour vegetable stock and simmer on medium heat. Once the pumpkin is soft, the soup can be mashed.

If the soup is too "thick", add some more water or vegetable stock. Season to taste with cinnamon, salt and pepper.

To serve, stir some crème fraîche until smooth and serve with pumpkin seeds and crispy pumpkin bread .
