Christmas pineapple jam


Festive pineapple jam with rum and walnuts is a great gift to give away .


ingredients





1 Pineapple, fresh (approx. 800 g)

1 kg Orange 

1 kg Tangerine 

Preserving sugar 1: 1 according to the amount of fruit, (approx. 1.5 kg)

100 g Walnuts

1 shot rum or 1 tsp rum extract


****you can use 1.5 kg  sugar with 2 tsp lemon juice if you do not have preserving sugar.


Preparation


Peel the pineapple, remove the hard core, dice the pulp. Peel the oranges and tangerines. Remove the furry skin from the oranges (best cut the orange fillets). Remove all "threads" from the mandarins as best you can. 

Cut the fruit into small pieces. Roughly chop the walnut kernels.Put all fruit pieces and walnuts and place in a tall saucepan. Add the preserving sugar in a ratio of 1: 1, stir in, put the lid on and leave to stand overnight.

On the other day, cook as usual until the gelling test is successful (approx. 20 min.) Or stir in 1/2 normal bottle of liquid gelling agent after a boiling time of 5 minutes and bring to the boil again. Remove from hotplate. 

Stir in a good shot of rum and immediately pour into prepared glasses and close. Shelf life: approx. 10 months.
