Christmas chicken gratin

Ingredients

3 chicken breast fillets

4 tbsp. olive oil

4 tbsp. olive oil

1 sliced ​​onion

2 sliced ​​red peppers

1/2 coarsely chopped cabbage

1 tbsp. tomato paste

salt

pepper

a little chicken broth

6 sliced ​​potatoes

1 tbsp. sweet paprika

1 cup milk

1 cup water

a little salt


For the cream

3 tbsp. butter

3 tbsp. flour

3 cups hot milk

a little nutmeg

a little salt

3 tbsp. grated parmesan


Preparation

For the Christmas gratin with chicken, first cut the potatoes into thin slices. Put them in a saucepan and simmer for 15 minutes with the milk, water, paprika and a little salt. We let them deglaze their liquids.

Finely chop the chicken fillets. Heat the olive oil. Saute the fillets for 5-6 minutes and add the onion, pepper and cabbage and sauté for another 5 minutes. Add the pulp and rub the base of the pot. Pour over the broth. Season with salt and pepper and simmer for 10 minutes to absorb the liquids.

Melt the butter in a saucepan, sprinkle with the flour and, stirring, for 1 /2 minutes. Little by little, always stirring, add the hot milk. Simmer for a few minutes to set the cream. Salt and grate a little nutmeg.

Put the potatoes in a buttered fireproof dish. Top with a layer of chicken and finally cover with cream. Sprinkle with the cheese and bake for about 35minutes in a well preheated oven at 180ºC until the surface is slightly browned.

Let the gratin stand for 10 minutes and then cut and serve.
