Christmas chicken casserole

 Fricasse de frango is an amazing and creamy Brazilian casserole topped with potato straws .It is a highliting xmas dish specially good for dinner .Kids and also adults will love it .Use leftover chicken if you like .

It is nice to serve with a pasta or a spicy rice .



Preparation time ; 35 minutes + 20 minutes in the oven

 ingredients


4 cups (tea) of water (800 ml)

2 medium chicken breasts, skinless and bone-in (1.3 Kg)

1 tablespoon of oil

1 chopped medium onion

1 chopped garlic clove

4 tomatoes, skinless and seedless, chopped

2 tablespoons of tomato pulp

2 pinches of salt

2 pinches of oregano

2 tablespoons of chopped parsley

1 can of cream or yoghurt

2 tubes of cream cheese (800 g)

1 packet of straw potatoes (120 g)

 

Preparation

In a pressure cooker or a pot, place the water and the chicken, and bring to the fire, and cook for 15 minutes after it starts to boil. Wait for the pressure to release, remove the bone and shred coarsely. Reserve. Strain the cooking broth, reserving half a cup (tea) of the liquid (100 ml). Reserve.

In a large saucepan, add oil and bring to high heat . Add onion and garlic and fry for 3 minutes, or until golden. Add the tomatoes and saute for 2 minutes or until you get a sauce. Add the reserved shredded chicken, tomato paste, reserved cooking broth, herbs and salt, and cook for 10 minutes or until slightly dry. Add the oregano, parsley and cream, mix without boiling. Remove from heat and set aside.

In a medium casserole dish (30 x 20 cm), spread half of the curd, place the chicken sauce  and the rest of the curd on top. Bake in a very hot oven (230 degrees), preheated, for 20 minutes or until the cheese begins to bubble and brown. Remove from oven, sprinkle with straw and serve immediately
