White Christmas canapes

 

This is a healthy and vegan canape. It is a great choice for “pinching” at Christmas, while dinner doesn't start. 




 

It is made on the basis of bread and olive oil and the other ingredients may vary according to your taste.

Ingredients

1 Baguette

2 cups of plain yogurt (unsweetened)

1 tablespoon of olive oil

1 tablespoon of lemon juice

1 spoon (of dessert) of salt

50 gr of arugula , can be substitute with diced lettuce

80 gr of dried figs or raisins 

1 bunch of chopped herbs (eg chives, oregano, basil)

Ground pepper (to taste)


Preparation 


Strain the yogurt (in a fine mesh strainer / sieve) and leave it in the refrigerator for 20 minutes.


Chop the figs (in small pieces). 


Take the bowl with the frozen yogurt, add the lemon and oil and stir well. Season with salt and ground pepper, add the herbs, the chopped figs and mix everything.

Cut the baguette into slices and pass the yogurt mixture in each one.


Finally, decorate with the arugula, spreading it over the top.
