christmas pappardelle

 



A pasta dish can also be on the table at Christmas. In the end, it comes down to the harmonious and seasonal products. Our implementation of incomparable Christmas scents can be found in the following (meat-free) pasta  which does not take more than half an hour to prepare and is a real feast even for non-vegetarians.

ingredients


500 g pappardelle (wide ribbon noodles)

100 g fresh figs , or use dried dates or figs 

1 red onion

2 apples 

3 -4 tbsp walnut kernels

100 g baby  spinach leaves

50 g  white wine

100 g mozarella or parmesan cheese

400 ml  full cream

½ teaspoon cinnamon powder

Salt, pepper 

1 tsp sugar

Juice of one organic lemon


preparation

Heat a large saucepan filled with water. Core the apples and cut into fine wedges. Put the apple wedges with the lemon juice, sugar and cinnamon powder in a small bowl and mix everything together.

Prepare the onion, cut into thin strips and set aside. Briefly wash and drain the spinach leaves. Briefly toast the walnuts in a coated pan. Cut the nut cheese into small cubes.

Salt the boiling water well and cook the pasta according to the package instructions.

Heat another saucepan and sauté the onion strips with the figs and apples in it.

 Season everything with salt, pepper and a pinch of sugar and deglaze with the white wine. Top up with the full cream and add the cheese.

Bring the sauce to the boil, stirring constantly, season to taste and, if necessary, add seasonings.

Finally, add the pasta and spinach directly to the sauce and toss everything well. Arrange in deep plates and garnish with herbs.
