Christmas coffe cake

One of the cakes worth preparing for Christmas is Grandmother . It not only looks beautiful on a festive table, but above all it is delicious.




Ingredients:

3/4 of soft butter

6 small eggs

1 1 / 4 cups brown sugar

2 1/2 cups of flour

1/2 cup of very strong, brewed coffee

1 tablespoon of fine instant coffee

2 teaspoons of ground ginger

1/2 teaspoon of cinnamon

1/8 teaspoon of nutmeg

1/8 ground or very finely crushed cloves

2 teaspoons of baking powder

1/4 teaspoon of baking soda

1/2 teaspoon salt

1/2 cup of honey


preparation 

Before you start preparing the dough, thoroughly mix the dry ingredients: flour, spices, baking powder, baking soda and salt. Do the same with coffee and honey - mix them thoroughly.

 Grease a ring  cake pan with butter and sprinkle with a little flour .


Grate the butter in a large bowl .

 

Add brown sugar and continue to mix for 2-3 minutes.

 

When the sugar and butter  are combined, add 3 eggs; Attention! Add eggs one at a time, mixing the mass each time.

 

Separate the remaining two eggs - leave the egg white in a bowl, add the yolks to the mixture and mix .

Add the yolk from the last egg, blend .

 

Add 1/3 of the previously mixed dry ingredients to the mass, mix .

 

While mixing, pour a thin stream of 1/3 of the coffee with honey - repeat until you use all the flour and coffee with honey .

 

Put the ready mass into the mold and spread it evenly .

 

Put the dough in an oven preheated to 175 ° C for about 45 minutes.

 

After removing from the oven, leave the cake for about 15 minutes. in a mold to cool down a bit. After this time, put it on a sheet of paper and let it cool down completely.


You can pour the cake with icing or glaze - coffee or chocolate  and sprinkle with dried fruit or nuts
