Easy christmas pudding

 



This easy Christmas chocolate pudding is made is chocolate pudding mix .That is for making it easy .You can make chocolate cake mix homemade follwing my recipe below the pudding recipe .This pudding can be made in a hour without soaking .But we add liquors to these .If you do not like add grape juice instead .You can also flame the pudding with brandy like traditional christmas pudding .


You can serve the pudding with rum sauce or brandy butter.

Preparation time ; 50 minutes

Baking time ; 30 minutes


Ingredients

1 cup of orange juice 

1/4 cup of brandy or rum

3 eggs

1/2 bar of melted butter or 100 ml melted neutral oil 

1 package of chocolate cake mix (450 g) , or homemade ( recipe below)

1 cup of nuts, coarsely chopped

1 cup of raisins

1/2 cup  of chopped candied orange peel

1 teaspoon of cinamon powder

1 teaspoon of grated nutmeg

1/2 teaspoon ground ginger powder

Preparation

In a bowl, mix the orange juice, brandy or rum, eggs, melted butter and, with the help of a whisk, whisk until the ingredients are homogeneous and set aside. 

In another bowl, add the cake mix, nuts, raisins, candied orange peel, spices and ginger. Stir with a spatula and add the previously mixed liquids, continue stirring well, until you get a homogeneous mass.

 Transfer the dough to a 22 cm diameter by 10 cm high baking sheet, with a central hole, greased and sprinkled with flour. 

Take to the oven preheated to 180ºC for 30 minutes, or until, when you stick a toothpick in the center of the dough, it comes out clean. Unmold the cake while still warm and serve hot .


Homemade chocolate cake mix , for a box

2 cups unbleached all-purpose flour

1-1/2 cups granulated sugar

1/2 cup natural  cocoa powder 

1 tablespoon +  1 teaspoon baking powder

1 teaspoon salt

4 tablespoons softened unsalted butter


In a large bowl combine the flour, sugar, cocoa powder, baking powder and salt. Whisk to combine.

Use a pastry cutter to blend in the butter.

Store in an airtight container and refrigerate until ready to use .
