Christmas tacos

 



There are many traditional and  Mexican  inspired Christmas foods . Especially these tacos, which include a comforting braised meat  and a holiday pomegranate salsa.


You can garnish with coriander and cream or grated cheese for a more festive tacos.


They can be easily make if you buy pomegranate seeds instead of whole fruit.


Preparation time; 60 minutes

Ingredients


For the meat:


500 g  chicken or beef meat 


 salt and pepper 


2 teaspoons oil


1 cup of chicken broth


2 dried  chiles (stem and seed removed)


1 cinnamon stick


1 bay leaf



Salsa 


1 cup of pomegranate seeds


1 diced green pepper


4 tablespoons chopped onions 


1 large lime (juiced)


1/4 cup pumpkin seeds (lightly toasted)




12 corn tortillas


Preparation 


Gather the ingredients.


Heat oil in a skillet over medium-high heat. Season the meat  with salt and add to the skillet. Brown for about 5 minutes per side, without disturbing, to develop a nice crust. Some fat will come off the meat and help brown it.


When the meat is well browned, remove from the pan and turn off the heat. Deglaze the pan with the broth , scraping the bottom of the pan.


Add spices and cook until liquid is evaporated. 


Turn off the heat, remove the bones, bay leaf, and cinnamon, and let the meat cool in the braising liquid.


Prepare the pomegranate salsa . Combine the pomegranate seeds, pepper, lemon juice, and pumpkin seeds in a small bowl.


Coarsely chop the meat with the  chiles, mixing them together. Taste and season with salt accordingly. If necessary, heat the mixture with the stew juices to serving temperature.


Heat your tortillas so they are soft and flexible.  Top tortillas with meat and salsa.
