Christmas squid

 The recipe for this dish that I am going to tell you is ideal to cook for a Christmas dinner or a meal. These rich Christmas stuffed squid are a delight for the plate. It is very easy to make, although somewhat laborious for cleaning the squid, but once you clean two, the others take a little while. I will tell you how I do it and have if you are so encouraged.

Ingredients:


for the stuffed squid:

1 cup of chopped ham or sausages

5 fresh large squid

4 eggs

flour to coat squid

for the sauce:

2 tbsp sweet paprika or chili powder

3 bay leaves

a liitle flour if needed

4 garlic

whole almonds

water

olive oil

Preparation


We will begin to make the squid by cleaning them very well, being careful not to break the ink bag, which is not a mess. When we have it very clean, we will separate the fins and the legs of squid. While we do this, we will put the 4 eggs to boil to make hard boiled eggs (15 minutes after they start to boil).

Then we will cut the legs and the fins of the squid into very small pieces. We will put them in a bowl.

Cut ham into pieces them into the bowl.

Now peel the hard-boiled eggs, cut them into small pieces and add to the bowl of the squid  legs and the ham.Add salt and pepper.

Fill squids with the mixture (Ham, legs and egg). When filling it, you have to force them to remain full and tight. Put the filling in all the squid and close with a toothpick so that it does not open and the filling of the squid comes out.

 making the sauce:

Heat a pan with olive oil. While the oil is heating, pass the stuffed squid through  flour.

Fry them in the oil of the pan so that they take on a little color and when they are ready remove them and leave them in a another pot .

In the pot we add the bay leaf, the garlic crushed  by hand and the pepper.

In the pan where we have fried the squid,  fry the whole raw almond and when it is fried,  remove it, put it in the mortar and crush it. When it is crushed, we add it to the pot with squids .

We turn off the fire in the pan and set the . Add 2 tablespoons of sweet paprika  ,flour and  give it a turn and add to the pot with squids. (Be careful not to pass the paprika, do not burn it, it makes it bitter)

Add  water and cover the pot .Cook 20 minutes in low heat. After time, the Christmas stuffed squid will be ready.
