The famous Viennese cookies make for the Christmas holidays. Topped with a candied cherry for the festiveness , they will attract kids and old alike with their melting, crumbly and buttery texture. Enjoy them with a tea or a chocolate drink.

Ingredients
225 g flour
190 g soft butter
75 g icing sugar
18 candied cherries
1 egg white
1/2 vanilla bean or 1 tsp vanilla extract
1 pinch of salt
icing sugar for dusting
Preheat the oven to 160 °. With a food processor or a mixer, whip the soft butter until it is creamy. Add the vanilla and salt while mixing.
Incorporate the egg white and whisk for 1 min. Add the sifted flour and mix with a spatula to incorporate it then stop working the dough. It should be smooth but dense.
Place the dough in a large enough piping bag (10mm at least). On a baking sheet lined with parchment paper, shape the spritz to the desired shape.
4Bake for 15 minutes without letting them brown too much. Right out of the oven while the shortbread is still soft, decorate with the cherries. Leave to cool then sprinkle with icing sugar before serving.
