Christmas rice

 


An easy and very festive idea to make rice during Christmas times specially for family gatherings .You can make these onepot and no need of sides .

ingredients

3 cups medium or long grain rice

4 cups chicken broth

1  tablespoon paprika 

a pinch of mixed herbs 

1/2 tsp of coriander powder

1/8 tsp of cumin powder

1/2 tsp of pepper 

1 / 8 tsp of cloves 

1 /4 tsp of garlic powder

1/4 pound smoked ham, cut into small cubes

1 pound chicken breast, cut into small cubes

1/8 pound turkey bacon, cut into pieces

1/2 cups yellow onion, chopped into squares

3 tablespoons garlic, finely cut

1/2 cup celery, diced

1 cup red pepper, diced

1 cup green pepper, diced

1 cup carrots, diced

1/4 cup coriander, finely chopped

1/4  cup raisins

1 /4 cup flaked almonds

1/4 cup black olives, sliced

1/4 cup scallions , chopped


instructions

In a bowl, stir the chicken stock with the spices .

Heat a pan to medium-high temperature . Add ham, chicken, bacon, onion and garlic; cook for 3 minutes, while stirring constantly.

Add the rice to the pan and cook for 2 minutes; stirs constantly.

Add the chicken broth you've reserved, as well as celery, pepper, carrot and coriander. Reduce the temperature to medium, cover and cook for 25 more minutes.

Once the rice is fully cooked, add the raisins, almonds, olives and chives. Stir all ingredients well, let stand for 2 minutes and serve.
