Christmas kutia


The Kutia  is a traditional Russian recipe for the Christmas festive table. Just try it out and enjoy. It is a nice combination of wheat kernels ,poppy seeds and dried fruits .You can garnish with fresh fruit if you want . 

It takes a long time to boil wheats , so the dish 's preparation time would be longer.

Ingredients 

200 g wheat kernels 

1 cup of poppy seeds

1 cup of milk

3 tbsp honey or sugar

100 g hazelnuts or walnuts (finely chopped)

100 g almonds (finely chopped)

100 g dried figs or raisins (finely chopped)

100 g dried dates (finely chopped)

Raisins

1 shot of rum or orange juice

    First put the wheat in a sieve and rinse thoroughly under clear water. Then bring the water to a boil in a saucepan and add the wheat. Take the pan off the stove and leave the wheat in the water overnight.

    The next day, drain the water through a sieve and rinse the wheat again under cold, clear water. Then bring the water to the boil again in a saucepan, add the wheat and let it boil until soft. This should be ready after about four hours. Then drain the water, put the wheat in a sieve and rinse again thoroughly under running water.

    Then put milk in a saucepan and bring to a boil. Then add poppy seeds and remove from heat. Let the poppy seeds soak in the milk for at least two hours. In the meantime, bring the water to a boil and place the raisins in a bowl. Then pour the boiling water over the raisins and let them soak. When the raisins are soft, drain the water and drain the raisins.

    Now pour off the milk from the poppy seeds and drain the poppy seeds. Then grind the poppy seeds finely twice in the food processor.

    Then heat the honey in a saucepan, then add the poppy seeds mixture and wheat and stir well. When the mixture is smooth, add the nuts, dried fruits and rum, stir well.

 Then transfer the kutia to a bowl and place the bowl in the refrigerator for a few hours. Arrange the kutia on plates and serve.
