Christmas 3 ingredient cake





 

Christmas cake  is a type of fruit cake served at Christmas time in many countries.

Christmas cake is an English tradition that was originally plum porridge. Made with candied fruits, raisins or soaked in rum, it is usually covered with icing sugar and decorated with edible  houses, trees or Christmas decorations.

This recipe allows you to prepare a Christmas cake in 5 minutes with only 3 ingredients: mixture of dried fruits, iced coffee and self-rising flour.

Total time: 1hour  5 minutes  (12 hours rest)

Servings ; 6-8


Ingredients

1 kg of mixed dried fruits (sultanas, currants, raisins, orange and lemon zest, candied cherries)

600 ml of iced coffee (or orange, apple, pineapple or black tea, coffee or milk chocolate)

265 g self-rising flour


 

Preparation:

In a large bowl, pour the dried fruit .

Add the iced coffee (or its  substitute) and mix well.

Cover with plastic wrap and refrigerate overnight.

Preheat the oven to 160 ° C.

Line with baking paper and butter a 23 cm diameter mold.

Gradually incorporate the flour with the fruit and iced coffee mixture.

Pour the mixture into the mold.

Bake for about 1 hour until the cake is firm and a blade inserted in its center comes out with a few wet crumbs.

If the cake is browning too much, place a sheet of aluminum foil on top and continue baking.

Take out and let cool.
