Christmas green beans

 The green beans sauteed are a staple in every kitchen, but ever thought you mix them with a taste strong as the citrus ? We do and that is our proposal today.

This garnish can be used for all kinds of recipes and although it seems like the usual, your guests will be more than surprised with your culinary initiative .




preparation time ;20 minutes 

Serves ;4 

Ingredients : 

300 g green beans

1 grapefruit , substitute with pomelo or other oranges 

2 fresh onions

2 cloves of garlic

  2-3 walnuts

A handful of hazelnuts and walnuts

Olive oil

Black pepper

Salt

Aromatic herbs


preparation:

1.  First peel the garlic cloves and onions . And put them to cook for about 10 minutes in a pot with plenty of water and some salt.


2.  When they are tender, drain well and reserve the water. Put the garlic and onions in a mortar together with the walnuts and season with a little olive oil, your favorite aromatic herbs and a pinch of black pepper. Blend the mixture until it reaches a paste texture .


3.  Cook the beans in the water that you had reserved  after cooking the garlic, it is better if you do not cook them a lot. A couple of minutes are fine. Drain them and put them in a bowl .



4.  Peel the grapefruit without leaving any of the white strips that cover it and without losing much juice. Chop it up and add it to the beans. 


5.  Toast the hazelnuts and pine nuts lightly in a pan without oil. 


6. Finally mix everything in the bowl of the beans, the onion and garlic paste, the grapefruit and the toasted nuts. I recommend to add some olive oil and salt and pepper again according to your taste.
