Christmas curry


A light , creamy , festive mixed curry with vegetables , meat and nuts .Can be serve only with rice.

INGREDIENTS


1  boneless turkey  or chicken breast


2 tablespoons of cooking  oil, sesame oil if have


2 red onions cut into medium cubes


½  pumpkin cut into medium cubes


2 carrots, peeled and sliced


2 cups of cauliflower cut into small florets


6 cups  of coconut milk


2 tablespoons curry powder 


1 tablespoon of grated ginger


1 finely chopped pepper


Coriander leaves


1 cup of roasted almonds or walnuts 



PREPARATION 


Prepare the Boneless Turkey Breast and cut it into chips;


In a saucepan, place the  oil and add the slices of turkey;


Add the onions, pumpkins, carrots, cauliflower florets and sauté a little more;


Add the coconut milk, curry, ginger and pepper and cook until the vegetables are cooked;


Turn off the heat and add the coriander leaves and almonds. Serve.
