Christmas chocolate caramels

 

A wonderfully chewy caramel can be one of the most appreciated items on the  sweet table around Christmas. 

It can be made as squares or in moulds 


Preparation time ;20 minutes

300 ml whipping cream

300 ml sugar

100 ml sugar syrup

2 tablespoons cocoa

2 teaspoons vinegar

1 tablespoon butter


Prepare caramel moulds or a large tray with greasing butter or oil

Mix cream, sugar, syrup and cocoa in a saucepan. Add the vinegar s during cooking.

Cook until the mass is at  120 degrees. Add the butter and mix. Pour the mixture into the  pan and  separate it before completely cooled.Allow to cool and cut into pieces .
