Christmas aspic

 

A traditional style vegetable aspec with a festive touch .We use lime jello for festive colour .






Preparation time ; 4 hours


1 cup carrots, finely diced


½ cup sweet pickled cucumber, finely diced


1 cup of apples, finely diced


1 cup of celery, finely diced


1 packet  (85 g) Lime Jello


1 ¼ cup boiling water


¼ tsp. salt


2 tbsp. tablespoon of vinegar



Oil or cover with plastic wrap a bowl or mold that holds about 5 cups.


In another bowl, combine carrots, pickles, apples and celery, then set aside.


Dissolve the Jello in boiling water, then add salt and vinegar.


Pour the liquid over the fruits and vegetables, then pour all the mixture into the mold.


Place in the refrigerator until everything is set (about 4 hours).


Unmold and serve.
