christmas rice



Rice is one of my favorite main dish  especially when we add  fruit and nuts. By mixing it with nuts we add more flavor and make this dish or garnish more presentable, so it is perfect for an elegant lunch or dinner like Christmas or New Years.


You  can make this vegan by using vegetable broth .You can serve this with roasted meat and   a salad .


preparation time   ; 30 minutes 

serves                       ; 2 



1 cup uncooked white rice
2 cups chicken broth  ,vegetables broth  or water
2 tablespoons unsalted butter or olive oil
¼ to ½ onion, finely chopped
1 garlic clove, finely minced 
¼ cup walnut  ,chopped
¼ cup sliced ​​almonds or cashews 
¼ cup raisins or dried cranberries
¼ cup apricots or dates , chopped
2 to 3 tablespoons finely chopped parsley or coriander
Salt and pepper to taste

 
Heat the chicken or vegetable  broth or water.

Melt the butter in a large saucepan or skillet. You can use olive oil instead of butter.

Add the chopped onion and garlic . Cook over medium heat and mixing so that the onion softens, about 3 minutes.

Add the rice and cook for a few minutes but the rice does not brown, only that the grain appears transparent. So that it doesn't burn when you cook it.
Add the broth or water. Season with salt and pepper to taste (if you use seasoned broth, do not add or season last).

Bring it to a boil, cover the pot or pan and lower the heat to the lowest level. Cook about 15 to 20 minutes but do not open the pot or mix because if you start to mix it, adding extra water will be gone.

Cook until the water has evaporated or the liquid has been consumed and the rice is smooth. Once ready, leave covered and take away from the gas .

After 5 minutes mix with a fork so that all of the rice are separated.

Add the walnut, almonds, raisins , chopped apricots, parsley or coriander and season to taste. 

Mix well and serve .
