Easy Christmas pasta salad


Best with a spicy chicken or ham roast due to creamy flavour.You can use yoghurt or sour cream if you don't like mayonise.

You can use any fruits like grapes,blueberry and raspberry. 

600 grams of elbow pasta 
4 red apples
6 celery sticks
1 can of pineapple in syrup
400 grams of  cooked diced ham  
1 small can of Sweet corn (optional)
1 handful of chopped fresh parsley or coriander
600 milliliters of sour cream, mayonnaise or plain yogurt
1 teaspoonful peppercorns
1 lemon (juice)
1 pinch of salt
1 bay leaf

Firstly, we put a pot of water to boil and add the bay leaf, peppercorns, a pinch of salt and bring it to a boil. When it boils, add the elbow paste and cook it according to the instructions on the package so that we stay al dente. Once boiled, drain the coditos, we pass them under the stream of water so that they do not continue cooking, drain them again and reserve.

While the pasta is cooking we prepare the rest of the ingredients for the  salad for Christmas. First we drain the pineapple in syrup but we reserve the game for later, and cut it into smaller pieces or even dice. Then we put it in a large bowl or salad bowl.


Likewise, we wash the celery branches well, remove the fiber strips they have with the help of a knife or lace and cut them into slices. 
We also add them to the salad bowl and at the same time, put the cooked ham in tacos and the well-drained sweet corn.
You can use cooked chicken  instead of ham if you prefer.
Then we wash the apples well and cut them into cubes. I prefer to leave the skin so that the coditos salad with ham and pineapple has more color but you can peel them if you want. Once cut, we put them in a container, cover them with water and add the lemon juice to prevent them from rusting.

You can add other red or purple fruits or berries to give even more color like grapes or blackberries.
