christmas sausages





This is the festive recipe for potato korv .Potatiskorv (more commonly known as värmlandskorv in Sweden) is a regional Swedish sausage from Värmland, made with ground pork, beef, onions and potatoes. Potatiskorv is traditionally served hot at Christmas in Värmland but often served hot or cold throughout the year.

It is a popular and delicious dish in Swedish Christmas table or julbord .


ingredients:
1 kg minced beef 
1 kg minced pork
750 g cold boiled potatoes
200 ml cold boiled Milk
1 teaspoon allspice
1 teaspoon cloves 
1 teaspoon Ginger powder 
5 teaspoons Sugar
2 teaspoons  pepper
4 tbsp Salt


*** you can substitute allspice with cloves and cinamon .

Start by grinding the minced meat and potatoes together as it will be easier to get it evenly distributed.
Then mix the minced meat with all the ingredients, work it together into an even batter so all the flavors are evenly distributed.

When you have mixed the ingredients properly, you can thread on the scales on the sausage horn and start stopping the sausage. Remember to rinse the scalp thoroughly with cold water before you start stopping the sausage.

Or wrap sausage shaped meat mixture in parchment papers or in oil .

Then  cook in boiling water and strore in the freezer until ready to use .


Fry in hot oil before serving .
