Christmas salad



This is multi colour christmas salad with many fresh vegetables and nuts .You can use dates instead of apricorts and use normal tomatoes instead of cherry tomatoes . We use walnuts but you can use almond or peanuts .


2 carrots 
12 leaves of green lettuce (plain or American, whatever)
12 leaves of purple lettuce ,substitute with purple cabbbage
100 grams of seedless raisins
100 grams of dried apricots
24 cherry tomatoes ,or use chopped 2 normal tomatoes 
1/2 unpeeled raw beets
80 grams of shelled walnuts


Cover with warm water the grapes raisins and apricots . Wait for about 20 minutes, until they are hydrated, and drain.

Slice the hydrated apricots lengthwise.

Lightly grind the nuts with the aid of a multiprocessor or a rolling pin (wrap the walnuts in clean paper towels or dish towels and beat with the stick).

Grate the carrots and beets .

Tear the lettuce leaves . Do not use a knife to chop them - the leaves darken in contact with the metal. You can use a plastic knife, but it is simpler and faster to tear them with your hands, besides the beautiful effect caused by irregular shapes and sizes.

Mix (again, hands) all ingredients , including tomatoes and serve.

If you want to use in salad dressing, prefer something soft, like a smooth mixture based on aceto balsamic, or with mustard and honey
