christmas quiche

This is one of the easiest christmas breakfast dish in the world .We use only 3 eggs to make many quiches .I will give you the link to make homemade puff pastry .If you can find readymade puff pastry
then you can make this without stress .For some people it can be eat only with a green salad but i think we can eat with bread toast for great christmas breakfast
If you do not like ham use sausages and use normal tomatoes instead of cherry tomatoes.
We place a pastry star to make it more festive .

1 roll or 10 slices of puff pastry
2 eggs
1 beaten egg
150 ml of cream
3 slices of raw ham
10 cherry tomatoes
1 tablespoon of pine nuts or peanuts
1 teaspoon of Italian herbs
A handful of arugula or spinach
A handful of grated cheese
butter for greasing
pepper and salt

Heat the oven to 180 degrees and grease the muffin tin with butter. If you use a roll of puff pastry, cut 8 squares from the roll. You use the rest to make the stars. Divide these 8 squares over 8 muffin cases.

Do the same with 8 slices of puff pastry from the freezer if you are using it. In a bowl or measuring cup, add the eggs with Italian herbs, salt and pepper. Beat the egg mixture  and add the cream. Mix well. Cut the tomatoes into 4 pieces. First place a few arugula leaves at the bottom of all muffin tins with puff pastry. Then also divide the raw ham, pine nuts and cherry tomato pieces over it. Then divide the egg mixture over all the molds by pouring it over it. Take the remaining puff pastry and press out a star with the cutter.

Place this on top of a mini quiche and repeat with all the quiches. Add a little bit of the beaten egg over the star and repeat with all the quiches. Then add a little grated cheese over all the stars. Bake the quiches in 20-25 minutes.
