Christmas pumpkin cupcakes



This is different from normal pumpkin muffins due to use of fruits and use of grated fresh pumpkin instead of pumpkin puree.

Decorate it with homemade red berries and holly  made from sugar paste .After that they will be like mini christmas puddings

Baking time;30 minutes 

ingredients

300 g pumpkin
300 g wheat flour
250 ml skim milk ,substitute with thick  normal milk
100 g brown sugar
90 g light butter
2 whole eggs
1 tbsp  ground cinnamon
1 block of white sugar paste
12 red sugar balls
12 holly leaves
1 sachet of baking powder
1 pinch of salt

Prepare the muffins. Preheat the oven to 180 ° C.

Peel the pumpkin and grate it. Take care to remove the seeds if necessary, then set aside.

Melt the light butter in a saucepan over low heat.


In a bowl, whisk the whole eggs with the brown sugar until the mixture turns white.

Add the melted butter and skim milk, then mix again. In another bowl, mix together the flour, grated pumpkin, baking powder, cinnamon powder and salt. Incorporate this preparation into the previous one until you get a very smooth and homogeneous paste.

Pour the preparation into silicone muffin cups up to two thirds.

Bake for 30 minutes in the preheated oven. Check the cooking of the muffins with the tip of a knife. It should come out clean and dry at the end of cooking.

Remove from the oven and let the muffins cool on a wire rack before removing from the mold.

When the muffins have cooled down, proceed to the decoration. Spread the sugar paste finely on a work surface, using a rolling pin, and cut it into several stars using a star cookie cutter. Place these sugar dough stars on top of each muffin and cover with the sugar balls and holly leaves.

Keep these Christmas muffins at room temperature until ready to serve.

Enjoy them for breakfast or afternoon tea during the holiday season.
