christmas crostinis


This is a easy and colourful  Christmas canape idea .Crostini is a appetizer made from bread slices and toppings like ham , cheese and cranberry sauce .That is totally different because we use a chicken or turkey pate and onion marmalade to these crostinis .You can make or buy  onion jam .However I will give you the recipe to make red onion at jam because it is healthy and cheap .


red onion jam

25g butter  or cooking oil
about 1 and half medium red  onion  thinly sliced 
Pinch of salt
50g (1/ 4 cup, firmly packed) brown sugar
60ml (1/4 cup) red wine vinegar

Melt the butter in a large saucepan over medium-high heat until foaming. Add the onion and salt, and cook, stirring, for 15 minutes or until soft.

Add the sugar and cook, stirring, for 5 minutes or until sugar dissolves. Add the red wine vinegar and bring to the boil. Reduce heat to low and simmer, uncovered, for 20 minutes or until the mixture thickens. Remove from heat .






christmas crostinis 


 1 french bread or sandwich bread  

250 g of  red onion jam

1/2   cooked chicken or turkey
breast

1 bunch of parsley

1 tablespoon of extra virgin olive oil

1 spoonful of mustard paste

The juice of half a lemon

salt to taste

pepper to taste

3 sprigs of coriander or parsley to garnish



Cut the meat into pieces and blend it with the rest of the ingredients   expect bread slices and jam, adding a little bit of leftover chicken stock or gravy  a little at a time . Store in the refregirator if you use later .

Cut bread into slices and if you use sandwich bread cut bread slices into squares . Toast them in a oven or in a grill or a pan .

Spread bread  slices   with    the chicken pate and add the  red onion jam on top. Garnish with a parsley or coriander leaf .
