Christmas cauliflower


The cauliflower is a  creamy and crunchy .Normally cauliflower  is not popular like potatoes in the Christmas  table .It is a great alternative to roasted potatoes or potato casserole .However cauliflower is one of the most popular vegetables with low carb . 100 g of cauliflower  contains only  5 grams .

This is a recipe for creamy cauliflower casserole for holidays .If you want to make it vegan use olive oil and vegan milk like coconut or almond instead of butter and milk. Use cream instead of milk for a  more creamy casserole .

1 cauliflower
75  g  of almonds
1 clove  garlic
125 ml of whole milk
2 tbsp of lemon juice or vinegar
60 g of melted butter
Salt
Pepper
chopped parsley

Remove the green leaves from the cauliflower and cut into sprigs. Arrange in a saucepan covered with plenty of water and cook until tender.

In a jug or a cup mix  melted  butter  and  milk with lemon juice .Beat well to form a cream .

Peel and mash the nuts together with the peeled garlic and parsley. Mix with the milk and butter mixture and season  with salt and pepper .

Preheat the oven to 200 C. Drain the cauliflower well and place it on a baking tray, cover with the cream and cook for a few minutes in the oven until golden.
