This is a meat free Christmas appetizer.
Amuse bouche is a French term which means a little bit of food which is served before the meal to stimulate the appetite. This is a amouse bouche that is made within few minutes .
It is very good to serve this appetizer before christmas dinner .

preparation time ; 20 minutes
1 ten slices of sandwich bread
6 slices of smoked trout
1 leek
Olive oil
1 dash of lemon juice
Preparation
Using a round cookie cutter, cut canapes from the slices of sandwich bread. Using a pastry brush, brush them with olive oil on both sides.
Place the slices on a baking sheet lined with baking paper, cover with a second baking sheet and bake for about 8 to 10 minutes, or until the slices of bread are golden and crisp. Take out of the oven, let cool.
Wash the leek, cut it into 5 cm sections. Cut the sections into very fine julienne lengthwise. Heat a little olive oil in a pan and place the leek filaments in it.
Remove them with a skimmer as soon as they start to be golden and place them on a sheet of absorbent paper.
Cut the slices of trout and divide them on the canapes of crispy sandwich bread. Drizzle with a dash of lemon juice and distribute the fried leek filaments.
