Classic Christmas potato salad


In Poland, Christmas Eve is a day first of fasting, then of feasting. The Wigilia feast begins at the appearance of the first star. There is no red meat served but fish, usually carp. 
This Christmas potato salad is the perfect way to add a festive touch to your holiday meal. Made with boiled potatoes, crisp celery, boiled eggs,pickles sweet carrots, and a tangy mayonnaise dressing, this salad is sure to be a hit with everyone at the table.

Ingredients

3  eggs

1 piece celery

4 pieces carrot

1 can sterilized peas

1 cup mayonnaise

4 pieces parsley

1/2 cup White Yoghurt

2 kg  potatoes

2  onion


infusion

1 Bay leaf

3  whole all  spices

1 tablespoon vinegar

salt

1 teaspoon sugar

5 whole black pepper
to taste

ground black pepper

mustard

Preparation 

The day before, we cook the potatoes in their skins. We also cook root vegetables and hard-boiled eggs. We clean the root vegetables and cook them in a brine.( in water with bayleaves , 5  of peppercorns, a pinch of salt, sugar and 1 tablespoon of vinegar). Let the vegetables cool down.

Peel the potatoes and push through a wheel with a grid or cut into cubes. We also cut cooked vegetables, cucumbers and onions into small pieces. Add everything to the potatoes and add the peas. Mix the remaining ingredients - mayonnaise (possibly with a little white yogurt), mustard, oil, salt, ground pepper and mix everything carefully. Finally, add the chopped eggs and season with the infusion in which we cooked the vegetables. Carefully mix the classic Christmas potato salad once more and let it cool down.

A classic Christmas potato salad is to be made early in the morning to settle down nicely in the evening.
