Christmas Madeleines

These exquisite madeleines are adorned with a festive Christmas design and baked to perfection. Each bite is a burst of buttery goodness with a hint of vanilla and cinnamon. The light and airy texture melts in your mouth, leaving you wanting more.

Cooking time;15 minutes 
 for 28 mini madeleines :

150 g flour
80 g butter
80 g of sugar with Christmas spices or, failing this, 80 g of sugar + 1 tsp of spices
2 eggs
2 tablespoons of milk
1 tsp baking powder
20 g candied orange
20 g candied lemon

Whisk the eggs with the sugar until a white paste is obtained.

Gradually add the flour and baking powder, then stir in the melted butter and milk.

Stir in the oranges and candied lemons cut into very small dice and mix gently.

Fill in the  greased and flour dusted madeleines moulds or use mini muffin pans.

Refrigerate a minimum of half an hour.

After half an hour, preheat the oven to 220 °.

Cook 3 - 4 minutes at 220 °. Continue cooking 6  -  8  minutes at 180 °.
