Venezuelan christmas chicken salad





This is a latin style chicken and potatoes salad with apple , peas and carrot. Reduce the amount  of ingredients if you make this as a side dish .This is also good without any main dish as this is full of nutrition for dieting people during all holidays .

serves ; 4

Large chicken chicken breast
3 carrots
5 large potatoes
1 small can of peas
1 Green apple, if you do not have an apple you can substitute green grapes
Canned and diced pineapple in syrup (optional)
Mayonnaise (2-3 large tablespoons) Check if you want to add more
Lemon
Salt, pepper and garlic powder to taste
1  chicken broth cubes 

In a saucepan with enough water, place a cube of chicken stock, a small stalk of garlic and the chicken breast. Cook for one hour. Once ready, let the chicken cool and frost it into small pieces.

Peel, wash, and dice carrots and potatoes. Bring the carrot to a boil first, wait a few minutes and then add the potatoes over medium heat until they soften and are firm but do not become puree.
Dice the green apple, also the pineapple if it is added.

Separately join the mayonnaise, salt and lemon drops to create a sauce.

Mix the vegetables, fruits, peas and mayonnaise mixture in an enveloping motion so as not to break them. Cover and place in the fridge for at least 2 or 3 hours.

If desired, serve it over lettuce leaves.
