Christmas vegetable soup



An easy recipe to prepare vegan vegetable soup during christmas days .This soup is very different and festive .Serve it hot as it will not taste really when cold .

Serves ; 4 -8 
Preparation time ; 30 minutes


1 potato
1 onion
1 large eggplant
1 l of water
2 tomatoes
100 g of peas
3 spoons  of olive oil
1 spoon  of salt

Peel and wash the potato, onion and eggplant and cut everything into pieces. Bring a pot of water to the heat, when it boils add the vegetables.

Wash and arrange the tomatoes and cut them into segments, add to the pan and cook for 20 minutes. In a separate pan, cook the peas for 7 minutes, then drain and rinse them in cold water. Reserve.

Remove the pot of vegetables from the heat and puree them. 

Bring to the heat again, add the oil, season with salt and bring to a boil. Then turn it off, let it cool a little and serve decorated with the peas. .
