Christmas pasta soup





A easy christmas soup with meat filled pasta .Use shell pasta for this soup. It is really good for christmas eve as well as a simple christmas meal.


If you choose to freeze them, all you have to do is put them in a freezer bag and you will have them ready for when you need them.

Preparation time ; 45 minutes 


1 potato 
- 1 leek
- 1/2 onion
- 1 tomato
- 3 liters of water
- salt
For filling the galets (approximately 50)
- 250 gr. minced meat (pork and beef)
- 1 clove of garlic
- a pinch of nutmeg
- aromatic herbs to taste (parsley, rosemary, thyme, tarragon)
- 1 egg
- 8 or 10 shell pasta for each person 



 First we make the broth. Still, after the broth is done, it should be defatted as much as possible. We put all the ingredients in a large pot (or in the express pot), salt and water until covered. 

More or less is three liters, and it is better not to use less because the  pasta will absorb a lot when boiled. In the express pot the broth is done in about half an hour and in a normal pot for at least an hour and a half.

To make the filling we put the minced meat in a bowl with the minced garlic clove, salt and a pinch of nutmeg, the herbs we have chosen and the whole egg. We mix well and we can already fill the galets. do not manage to fill them with a teaspoon, no matter how small it is, so with clean hands I fill them directly with my fingers, and so you can also push the meat well so that it does not come out when cooked in the broth .

If you choose to freeze them, all you have to do is put them in a freezer bag and you will have them ready for when you need them.

Finally, strain the broth and boil the filled pasta in it  for at least 20 minutes.
