Christmas caponata




A delicious festive eggplant preparation from Sicily. It is like a christmas cake because of the use of fruits.This is a baked recipe for caponata.It is perfect as a christmas side or a starter dip.

2 diced eggplants
Salt and black pepper to taste
3 chopped garlic cloves
2 tomatoes cut into 4 pieces
2 chopped celery stalks
1 onion cut into four parts
1 chopped green pepper
2 tablespoons of olive oil
3 tablespoons chopped parsley
2 tablespoons of capers
1 tablespoon chopped walnuts
8 chopped black olives
2 tablespoons of balsamic vinegar
1/2 teaspoon of cocoa powder

Method of preparation


In a bowl, season the eggplant with salt.
Place in a colander and let stand for 1 hour.
Squeeze, wash and squeeze again to remove excess salt.
In a bowl, mix the eggplants with the garlic, tomato, celery, onion and pepper, seasoning with 1 tablespoon of olive oil, salt and pepper.
Spread in a pan, place in a medium oven, preheated, for 30 minutes or until softened, stirring occasionally.
Remove from the oven and let cool.
Add the remaining ingredients, stir and serve.
